Late-Night Fries That Feel Like a Hug in a Bowl

Some nights just call for a little indulgence. You know the ones—the clock has crept past dinner, the world outside feels still, and you’re curled up on the couch trying to squeeze in just one more episode of your current binge-watch. (For me, it was the second season of You—and yes, I was already counting down to Season 3.)

On nights like these, when it’s far too late to order delivery and cereal feels a bit underwhelming, I find myself craving something warm, salty, and comforting. That’s exactly how these oven-baked garlic parmesan fries came to be. They’re simple to throw together, satisfy all the late-night cravings, and, honestly, taste like the kind of treat you’d want to share… if you weren’t perfectly content to enjoy them all to yourself.


What You’ll Need

For a single (generous) serving, or enough for two if you’re willing to share:

  • 1–2 russet potatoes, cut into matchsticks (I used one since it was just me, and I didn’t want leftovers tempting me at midnight)
  • 3 tbsp extra virgin olive oil
  • 1 tbsp thyme (fresh if you have it, but dried works fine too)
  • 4–5 cloves of garlic, skin on and lightly smashed (or chopped garlic if you prefer a sharper bite)
  • A pinch of table salt + a sprinkle of sea salt to finish
  • ½ tsp paprika
  • 2 tbsp grated parmesan cheese
  • 1 tbsp salted butter

How to Make Them

  1. Set the stage. Preheat your oven to 220°C (425°F). You want it nice and hot so the fries get crisp instead of limp.
  2. Season generously. On a large baking sheet, toss your matchstick-cut potatoes with olive oil, thyme, paprika, smashed garlic cloves, and a pinch of salt. Spread everything out into a single layer—it makes a difference in getting that golden crispness.
  3. Bake to golden. Roast for 15–20 minutes, then flip the fries and bake another 15 minutes. This ensures every side gets its turn against the heat.
  4. Add the magic. Sprinkle over the grated parmesan and dot with salted butter. Toss everything together, then return the tray to the oven for another 5–10 minutes. The cheese melts into the potatoes, the butter adds richness, and suddenly these humble russets are transformed into something a little luxurious.
  5. Finish with flair. A last dusting of flaky sea salt is optional, but it really makes the flavors pop. Serve hot and crispy, straight from the pan if you like—this is late-night snacking, not fine dining.

What I love most about this recipe is how it turns the simplest of ingredients into something indulgent.
